What’s better than a BBQ, we ask? An Italian BBQ, of course, matched to unique and refreshing local beers!

Passionate chef, presenter and mentor Matteo Toffano earned some serious stripes working at three-starred Michelin restaurant Le Calandre with renowned chef Massimiliano Alajmo. He’s also been a finalist in a number of international culinary competitions, including the Uniliver Chef of the Year 2017 and 2018, and the prestigious San Pellegrino Chef of the Year 2018 (Pacific). He’s recently finished a six-year stint as chef de cuisine at Melbourne stalwart, Grossi Florentino Upstairs, and is now sharing his knowledge and passion for Italian cuisine and Australian produce through workshops and long table experiences at The Mantle in Toolern Vale.
The Italian grigliata (barbecue) always brings family together. And it’s always done over a wood fire, rather than gas, which imparts a special flavour – and requires a certain knack! Matteo will explain all of this, and teach you the different salts, herbs and cuts of meat that will make the perfect Italian BBQ. He’ll also serve a selected range of beers from the Daylesford-Macedon region.
The fruits of your labour
After all the learning and cooking, enjoy a meal of barbecued lamb cutlets, pork fonna sausage, fiorentina with rosemary salt and a select range of local beers.
