The Expert: Greek-Cypriot born Niki, grew up surrounded by amazing cooks - her mum, both grandmothers and four aunts, it was inevitable that she would end up a cook. After a childhood learning to refine the amazing skills, recipes and patience it takes to cook, Niki's first foray into culinary world was spurred by Matt Preston's rave review of her homemade souvlaki ('Home Sweet Souvlaki Home', The Age Epicure, 2004). Niki quit her 9 to 5 job and took a huge plunge in opening her own cafe and catering business. Over the years she has been invited to give cooking demonstrations for many food festivals including The Food and Wine Festival, The Antipodes Festival (Lonsdale Street Festival) and The Oakleigh Glendi. Niki has expanded her brand and now owns a cooking school, My Greek Kitchen, specialising in Greek cuisine, which operates from South Melbourne Market Cooking School and in Templestowe and Mornington Peninsula.

The Plan: Taste the flavours of Greece during this 3 hour small group cooking class with amazing ocean views Mornington Peninsula has to offer. Under Nicoletta's (Niki) watchful eye, you will prepare a variety of Greek dishes to feast your culinary senses on. You will be able to expand your cooking repertoire and duplicate the recipes in your own kitchen for you and your family to feast on. We start our morning with a good cup of Greek coffee,for those who dare, or a latte/cappuccino and homemade Greek biscuits whilst admiring the amazing ocean views from where we will be cooking. We will then get stuck into some serious cooking.

The Fruits: After our morning shot of caffeine, we will progress with the day by making some Gemista(vegetarian stuffed vegetables), Dolmades, Burghal wheat pilau with Greek yoghurt, Calamari in red wine, Chicken Youvetsi(chicken and pasta casserole) and of course Greek salad - washing it all down with some great wine. We finish off with Bougatsa - a seriously delicious dessert of semolina custard parcel. A memorable day with amazing ocean views, a belly full of food, new friends and lots of stories and tales, and a handful of new recipes to try out.

The Kit: Important to bring lots of enthusiasm, an empty stomach and stories to share with new friends. Please wear comfortable clothes and closed shoes.
