The expert

Marlene Hoff – otherwise known as the 100 Mile Foodie – is all about keeping it local. She uses only sustainable, ethically made products and food produced or grown within 100 miles of her location. She and her team offer catering, special events, cooking workshops and private dinners out of two locations, South Gippsland and the Mornington Peninsula.

Marlene believes people want to know where their food comes from, how it was farmed, and whether it’s seasonal – and she’s happy to help them learn all about it.

The plan

Be ready to roll up your sleeves and get busy. You'll be braising beef brisket from Hillock Downs, slow roasting lamb shoulder from Woolumbi Farm, and making all manner of tasty dressings to turn these main ingredients into many different meals. Learn how to create melt-in-the-mouth, beautifully tender beef that can be used in a simple pot pie, as a beef slider, or to serve with pappardelle pasta as an easy weeknight solution. See how a slow-roasted lamb shoulder can go – and with it your tastebuds – to the next level, by serving it with lemon and cumin dressing, pomegranate molasses, or ras el hanout spice rub and a honey and yoghurt sauce.

The options for transforming braised beef and roast lamb are endless and you will have the opportunity to try them all – along with a raspberry and rhubarb crumble (made with berries from Sunnyridge Strawberry Farm).

The fruits of your labour

You will take home the skills to make your own melt-in-the-mouth braised beef brisket and slow-roasted lamb shoulder – to serve in many different ways. Lunch in a beautiful location is the crowning glory.
