Barbecuing seafood can be tricky – unless you’ve learned how to do it from an Italian native boasting a string of cooking accolades, like Matteo Toffano! While you enjoy a glass of Prosecco, Matteo will teach you everything you need to know to deliver an amazing seafood BBQ feast, from cooking times, to sauces, to incorporating garden-fresh leaves. Yes, leaves! It’s all cooked on a wood-fire grill, of course, Italian-style: the flavours are pretty incredible!
The fruits of your labour
Master the making of king prawns with pancetta, tuna BBQ, lemon emulsion, the use of fresh leaves, calamari, and zucchini and pepper. Wash it all down with a refreshing glass of Prosecco.

Passionate chef, presenter and mentor Matteo Toffano earned some serious stripes working at three-starred Michelin restaurant Le Calandre with renowned chef Massimiliano Alajmo. He’s also been a finalist in a number of international culinary competitions, including the Uniliver Chef of the Year 2017 and 2018, and the prestigious San Pellegrino Chef of the Year 2018 (Pacific). He’s recently finished a six-year stint as chef de cuisine at Melbourne stalwart, Grossi Florentino Upstairs, and is now sharing his knowledge and passion for Italian cuisine and Australian produce through workshops and long table experiences at The Mantle in Toolern Vale.
