The experts

Jayden Ong
Described as 'a star in the making' by James Halliday, artisan wine producer Jayden Ong has had a rise in the winemaking world that is nothing short of meteoric. His focus is on cool-climate, single-vineyard sites, and producing wines that are detailed, pure and expressive with an alluring character defined by the vineyard and vintage. Or, as Jayden puts it: 'wines crafted by the earth in which they grow'. Jayden is also co-founder of the Cumulus Inc. restaurant with superstar chef Andrew McConnell.

Mauro Callegari
After a glittering career working for some of the biggest names in hospitality in Australia and around the world, chef Mauro Callegari settled in Gembrook, where he runs the enduringly popular restaurant and bar, The Independent. Given his extensive experience and passion for Spanish, Italian, Creole and North African flavours, you will be hard-pressed to find a better instructor for paella-making than this Argentinian native! 

The plan 
An immersive experience set across the winery, cellar door and surrounds, where Jayden will run through how to make wine, and Mauro will share his secrets for making authentic paella. This is not your typical seated winery event – it will have a relaxed nature, taking place on the lawn of Chestnut Hill, overlooking the vines. Guests are encouraged to mingle and move around the outdoor event space. You can expect hay bales for seats, a conga line for paella (returning as many times as your appetite desires), delicious wine flowing, and some fun wine-making and paella edification throughout the afternoon.

The fruits of your labour 
Start with an appetiser on arrival, followed by paella and an extensive tasting of One Block's current white, saignée and red wine range. Finish off with something small and sweet, and a copy of Mauro's paella recipe to take home – along with all your new wine-making knowledge.

An appetite! Also boots or flat shoes for walking in and around the winery and on grassed areas.
