At this hands-on, full-day workshop, you will build a fully functioning, recycled-brick pizza oven in the morning, and then eat the wood-fired pizza you've cooked in it during the afternoon!

The expert Andrew Hanson (Hano) is an experienced pizza maker and sourdough baker who loves the process of cooking with flame. He honed his wood-fired oven skills using a self-constructed oven, working in cafes and restaurants, and travelling to Italy where he volunteered in a number of restaurants. He is passionate about using local, organic ingredients where possible and exclusively uses biodynamic, stoneground flour in his pizza bases. His teaching approach is hands-on and practical, ensuring class participants leave with the knowledge and skills required to implement their learning at home.
The plan If you’re a sucker for the taste of wood-fired pizza, the folks at Penny Olive Sourdough have designed your perfect day out. Hano will teach you how to construct a stacked-brick, wood-fired pizza oven that can be easily replicated at your home. He will also share his tips for planning and preparing your oven fire, and managing the fire throughout the baking process.
Next you will hand mix your own organic sourdough pizza dough, practise 'rounding' your dough into pizza balls, and learn the art of hand stretching pizza bases. Then it's time to prepare a range of organic and homegrown toppings, and bake your pizza in the wood-fired oven you constructed that morning… with a glass of wine in hand, of course!
The fruits of your labour Gain the practical skills you need to build your own pizza oven, and make your own pizza dough – then lunch on the pizza you've made, served with a salad and Yarra Valley wine (vegetarian ingredients available). The workshop includes espresso coffee and morning and afternoon tea.
